My name is Nicholas Rinaldi, and I was born in Bologna in 1995. Today, I live in the hills of Monzuno, a small village in the heart of the Bolognese Apennines, surrounded by forests, wildlife, and some of the most fascinating truffle habitats in Italy.
My passion for truffles began more than 15 years ago thanks to my great-grandfather, a farmer and truffle hunter who taught me to respect the land, understand the rhythms of nature, and appreciate the unique relationship between humans, dogs, and the wood. What started as a family tradition soon became a true way of life.
Today I am the founder of Azienda Agricola Il Sole, a family-run farm established in 2026. We manage more than 60 hectares of land in the areas of Monzuno, Vado, and the Monte Sole Natural Area, including over 8 hectares of private truffle grounds.
I work alongside my three truffle dogs, the real stars of every hunt: Eda, a Hungarian Vizsla; Lola, a Lagotto Romagnolo; and Pina, the youngest member of the team, a Pointer-Bracco mix. Their talent, dedication, and enthusiasm make every outing unique and unforgettable.
Our land produces some of the finest treasures of the Apennines, including White Truffle (Tuber Magnatum Pico), Black Truffle, Summer Truffle (Scorzone), Porcini Mushrooms, and artisanal honey from acacia, chestnut, and wildflowers.
What makes our Truffle Experience truly special is its authenticity. We do not organize demonstrations or staged activities. Every experience takes place in real hunting grounds, in private forests and protected natural areas where truffles grow naturally. Guests accompany us and our dogs on an actual truffle hunt, discovering firsthand the secrets, traditions, and emotions of this ancient practice.
Because of this strong connection with nature and real truffle seasons, our Truffle Experience is available only during specific periods of the year: from May to the end of July for Summer Black Truffle (Scorzone), and from September to January for the prized White Truffle (Tuber Magnatum Pico).
Each experience lasts approximately one and a half hours and is designed for small groups of up to six participants, ensuring a personal and immersive adventure. Tours are available in both Italian and English.
For me, truffle hunting is much more than finding a valuable product. It is about preserving a tradition passed down through generations, protecting a unique natural environment, and sharing the beauty of the Bolognese Apennines with people from all over the world.
